Spiced Sweet Potato Wedges

   Sunday evenings are for relaxing in our home. This often means no plans or ideas for supper, leading to random snacking or a bowl of cereal. I'm always fine with both but tonight, with Jonathan's encouragement, I decided to make our favorite Spiced Sweet Potato Wedges recipe. I've made these often and don't know why I haven't shared them yet. Seriously they are so good that it must be shared.
Spiced Sweet Potato Wedges- Mad Hungry Recipe book

2 tbsp brown sugar
1 tsp coarse salt
1/2 tsp ground cumin
1/8 tsp cayenne pepper (I do even less)
4 medium sweet potatoes, peeled, sliced in half lengthwise, and cute into wedges about 4 inches thick. (I use two yams for Jonathan and myself)

1) Preheat the oven to 350F. Cover a rimmed baking sheet with baking parchment or foil.

2) In a large bowl, combine the brown sugar, salt, cumin, and cayenne. Spread the sweet potatoes on the baking sheet. Drizzle the oil over the wedges and toss to coat.
3) Transfer the wedges to the bowl and toss completely with the spice mixture to coat each piece. Return the potatoes to the baking sheet and spread out in a single layer.
4) Bake for 10 minutes. Turn over the wedges. Raise the heat to 400F. Bake for 10 to 15 more minutes, until the potatoes are golden brown and tender.
This is such an easy recipe and it's always a hit with Jonathan and company. I have no doubt that you'll love it too. Bon Appetit!!

I can completely identify with Sunday cereal meals :) These wedges look absolutely yummy though...I'll definitely be giving them a go!
