Lazie Dorie Cake

   I want to share with you guys a recipe that I was able to glean from my mom this past weekend. It's a cake she use to make all the time for dessert and was definitely a great motivation to finish the food on our plates. We all loved this simple cake as kids and after making it for the first time this weekend I remembered why it was always a favorit. 


   It also turns out Jonathan grew up with this cake too but instead called it Lazy Daisy Cake. Which, after googling it, I've discovered that it's the correct name but I refuse to call it any thing other than what I grew up with. So, with no further adieu here is the delicious recipe for Lazie Dorie Cake.


  Lazie Dorie Cake
2 eggs beaten
1 c.brown sugar
1 c. flour   
1 tsp. vanilla
1/2 c.milk   
1 tsp. baking powder
Pinch of salt
3 tbsp. butter or marg.
Add sugar, flour, baking powder, salt and vanilla to beaten eggs.
Boil milk and butter together and add to first mixture. bake in moderate
oven for 25 minutes. 350 degrees.
 
Topping
8 tbsp. brown sugar
3 tbsp. butter
4 tbsp. milk
Add 1 cup coconut to above ingredients which have been boiled together.
Put on top of hot cake and put back in oven and put back in oven till brown.
( I usually double the topping part)

This is one of my favourites!!! My mom used to make it when we were kids and we called is Lazy Daisy Cake... when I make it now, I like triple the coconut frosting, haha! It's the best part!

kinda like german chocolate but without the chocolate? looks super good, especially on a super cold day!
